Celiac disease or gluten intolerance?

Some people may be gluten intolerant or have celiac disease which means they are not able to tolerate gluten. This in turn leads to weight loss, anemia, osteoporosis, and malnutrition especially in children. There are blood tests to detect antibodies specific to celiac disease, or a biopsy of the small intestine can be done to indicate if a person has celiac disease.

As for cereals you may use puffed buckwheat, puffed corn, puffed rice, rice flakes, soy cereals, cornmeal, and quinoa flakes. In terms of pastas and noodles use ones made from quinoa, beans, corn, potato, and rice or soy flour. Look for the gluten free sign on packages.
